Chocolate Brownie Ice Cream

Ingredients
1 (19.9 oz) box chocolate brownie mix, prepared according to package directions
2 (8 oz) pkgs cream cheese, room temperature
1 cup sugar
2 tsp vanilla extract
2 cups heavy cream, divided
5 drops food coloring, if desired
Directions
- Line a half-sheet pan (18 x 13) with Simply Done® Parchment Paper. Bake prepared brownie mix at 350° F for 8 to 10 minutes. Let cool. Freeze for 1 hour.
- Cut brownies across the middle into two equal halves. (A serrated knife works well for cutting through brownies. You could also use a smooth blade if you don't have a serrated one.)
- Make cream filling by beating the cream cheese with the sugar until smooth. Add the vanilla and 1 cup of heavy cream. Beat until fluffy. Slowly incorporate the second cup of heavy cream until well-combined.
- Add food coloring. Swirl into the cream for a marble effect.
- Spread cream mixture over half of the brownies.
- Top with other half of brownies. Freeze for at least 3 hours. Use a serrated knife to cut into individual sandwiches to serve.
